This is a photo of the new, rather large cold store extension, taken from the far end of the barn (the entrance to the cheese room is through the plastic curtain partition on the left.<br />
<br />
We will now be able to make and store Pike's Delight and Devils Rock Blue on a much more regular basis. Over the next 3 months or so, we will be able to build up the stock of these 2 cheeses to ensure they are always available.<br />
<br />
We will also be able to control the maturation and storage of Pexommiers due to an elaborate multi-temperature environment within the cold store complex!<br />
<br />
So..... starting this week, we will be able to make more cheese......<br />

It's an internet based word game (obviously devised by some very bored people) involving the search engine site Google. The idea is to key in any two words of your choice and see how many websites Google points you to. This will usually result in thousands of pages being found. However, on very rare occasions, Google will only find one. It looks through billions of webpages and only finds one that delivers. A site that, in its own way, is unique and special. This is a googlewhack, and there are actually people out there who find them for fun!!<br /><br />This has occured since I invented the word 'Pexommier' for our new french style cheese. Unfortunately, I only have a little sports car that is completely useless in the snow, so over the past couple of weeks I've had to resort to leaving it on the main road and completing the journey on foot.<br /><br />My mind has wandered between wondering if you can actually get frostbite in Todmorden, to wondering why I didn't build the cheese factory in the valley bottom. I've even contemplated buying some ridiculous 4x4 car but ruled this out because I definitely prefer my Celica. The 20 minute walk has certainly filled my head with ideas, just imagine what a walk to the South Pole would do to my imagination.<br /><br />I forced myself to be constructive in this time of cold desperation, resulting in me re-designing/re-writing the Pextenement Cheese website in my head. So, roll on 5 days of being hunched over my laptop, coding what has filled my head for the last few days, albeit with a few excursions into Facebook etc., to keep my sanity.<br /><br />I've almost keyed it all in, I'm just testing it now. It's taken 12 months hard work, working with 58 suppliers (who've <span class="blsp-spelling-corrected" id="SPELLING_ERROR_0">benefited</span> to the tune of 110 invoices!) and numerous council departments, agencies and organisations. But it's good now to finally see the cheese being bought by the public of <span class="blsp-spelling-error" id="SPELLING_ERROR_1">Todmorden</span>.<br /><br />This week has seen us create (and individually wrap!) hundreds of cheeses to <span class="blsp-spelling-corrected" id="SPELLING_ERROR_2">simultaneously launch at the Crumbly Cheese stall in the indoor market and the Bear Wholefoods and Cafe. In addition, the Todmorden Vintner Bistro and Cherries Tea Room have now included the cheese on their menus.</span><br /><span class="blsp-spelling-corrected"></span><br /><span class="blsp-spelling-corrected">Inbetween producing the cheese, we've been interviewed by the Todmorden News to coincide with the launch. This is an initiative whereby European Union money is used to provide 40% funding for new businesses. It's administered by Yorkshire Forward and Business Link with Growing Routes helping out with the application and post approval support. It sounds so simple!<br /><br />Roll on 4 months, one 60 plus page application form (including the 30 page Business Plan and evidence of dozens of other application criteria documentation), numerous phone calls to Debbie from Growing Routes, numerous emails to Phil from Business Link, and........<br /><br />We finally got the grant approved at Christmas 2008!! Yipppppppppeeeeee! Now the work can start.<br /><br />Only one slight snag, all contractors were on an extended Christmas holiday.<br /><br />Oh well, it's mid-January then to start work.......<br /><br />Special thanks to Debbie and Phil for assisting with getting this through in time for Christmas. I worked in an IT department of a major UK bank and I realised that I was giving the vast majority of my time to the company (after all, that's what they paid me to do!).<br /><br /><strong>"When will I see some of this cheese on Skipton Market......?!!"</strong><br /><strong></strong><br />.....said the boss one day as he sampled a piece! That was it - it was time to do something about it. The answer came in the form of the "career break" programme, which I started in July 2008 after 22 years of service!<br /><br />Since leaving the company, it appears to have gone into freefall, eventually being swallowed up by another major UK bank! I picked it up in a monastry somewhere where the monks produced everything they needed. That got me thinking - I have patience, and I know where to get an almost endless supply of milk - all that was missing was the 'time' bit!<br /><br /><strong>Wind forward about 10 years....</strong> I purchased myself a Cheese making kit. The thing that struck me most was the fact that it hardly contained anything! Surely you must need more equipment to make cheese?! The simple fact is - you don't need much!, just good fresh milk and as mentioned, time and patience (and as I found out later an extreme attention to detail).
